Drunk Cherry Four Loko cupcakes with Maraschino Cherry Frosting
Since I was unable to locate a sufficient recipe for drunken cupcakes, I came up with my own. I made them for a barbecue a couple of weeks ago, and they were a huge hit. The vodka-infused cherry in the center matches a candy-sweet maraschino cherry frosting to invoke the flavor of my favorite low-budget Friday night.
Ingredients:
1 c butter, softened
2 c sugar
4 eggs
4 c flour
1 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 3/4 c Fruit Punch Four Loko
24 vodka-soaked maraschino cherries*
red food coloring (optional)
Cream together butter & sugar. Add eggs one at a time, mixing well after each. Add vanilla & food coloring. In a separate bowl, sift together flour, salt, baking soda, & baking powder. Incorporate flour mixture and Four Loko into egg mixture in alternating intervals, beginning with the flour. Fill cupcake liners 3/4 full of batter. Insert one cherry into the center of each cupcake. The top of the cherry should still be visible. Cover tops of cherries with 1 tsp of batter. Bake @ 350 for 22 - 25 minutes.
For the frosting:
2 sticks butter, softened
4 c powdered sugar
3 tbsp maraschino cherry juice
red food coloring (optional)
Beat butter until light & fluffy. Add 2 c confectioners sugar & beat well. Add cherry juice & the rest of the sugar. You can use red food coloring to enhance the color of your frosting. Pipe onto cooled cupcakes; top with a candy garnish of your choice.
* To make vodka-infused cherries, simply drain a jar of maraschino cherries (reserve the juice for your frosting!) and replace the juice with the vodka of your choice. I used strawberry flavored Burnett’s. Store cherries in refrigerator for 3 - 5 days or until desired potency is reached.
